Crock Pot English Beef Pot Roast is so simple and so tasty. It's a fix it and forget it type of meal that you can set up in the morning and have dinner just ready for you in the evening. Who doesn't love using their crock pot? It's a wonderful tool to help you in the kitchen. The model that I use is set up with a timer so when I reach the end of the timer, it automatically goes to warm. It only costs a little bit more for this feature, but it's so worth it!! Something I just discovered is a crock pot with a stove top safe pot, so you can sear and slow cook in the same pan. That is a great idea! Saves the trouble of having to wash another pan when you want to sear your ingredients prior to slow cooking. https://amzn.to/2KMDASf
You can use many different cuts of roast for this recipe. I found an English Roast at the grocery store so I used that, but if you find another cut that you love, just follow the same steps.
Crock Pot English Beef Pot Roast with Golden Potatoes & Carrots: Recipe by Indiana Mommy Cooking From the Heart Land
- 4-5 pounds English beef roast
- 1 tablespoon butter
- 1 tablespoon olive oil
- 1 teaspoon sea salt or to taste
- ½ teaspoon dried thyme
- ½ teaspoon black pepper or to taste
- 5 garlic cloves peeled and smashed
- 1 onion peeled and cut into large pieces
- 1 pound carrots peeled, ends removed and cut into large pieces
- 3 pounds small golden potatoes washed well

Rub the beef with salt, pepper, thyme and olive oil. Sear the beef over medium high heat in olive oil and butter until browned on all sides. Remove from the pan and add 2 cups of water to the pan cooking over medium high heat and scraping up the brown bits from the bottom of your pan. Put the beef in the crockpot first, then top with all the vegetables, then pour over the sauce. Cook on high for 5-6 hours, it depends on how large your roast is how long it will take to get tender. Your vegetables may be ready sooner, so if they are done around 4 hours, remove the carrots and potatoes from the crock pot and then put back in at the end just to warm back up.
